What wine goes with sushi?

Sushi loves crisp, light, low-oak whites and sparkling wine: dry Riesling, Champagne, Grüner Veltliner or Albariño. A light Pinot Noir works with tuna and salmon.

The rule: Soy and wasabi need acidity; skip tannin and oak.
